Rich's Cake

330g sugar, marge, flour

6 eggs

1300g/tin

Liz's Chocolate Cake

Ingredients

300g caster sugar

175g plain flour

50g cocoa

1tsp baking powder

1tsp bicarb of soda

1/2tsp salt

2 eggs

100ml sunflower oil

2 tsp vanilla essence

165ml milk

100ml boiling water (50ml for large cakes) – I think I used about 60ml last time

Recipie

Preheat oven to 160

Grease and line two 8” sandwich tins

Mix together flour, cocoa, Bicarb soda, baking powder and sieve three times

Add sugar and salt and mix well.

Mix together milk, olive oil, vanilla and eggs until well combined.

Add wet ingredients to dry until just combined then mix for about a minute with an electric mixer until smooth. Add boiling water until combined.

This gives a very liquid batter, don't worry it's meant to be like this, for cupcakes it's easier to pour it into a jug then pour from the jug into the cupcake papers.

Fill the tins half way full as they rise a lot.

Bake for 30 mins

When cool sandwich together with chocolate buttercream or ganache and cover on top.
